Sweet & Spicy Fresh Peach Salsa

And, not to toot our own horn or anything, we know a thing or two about making delicious salsa. Our Summer Salsa has been a staple at our dining room tables and outdoor gatherings for nearly 20 years. Don't just take our word for it thought, our Summer Salsa recently received two first place awards for flavor and spice.
 
When found ourselves with a handful of extra peaches, we knew exactly what to do! Peaches + Salsa = a match made in flavor heaven.
Our Sweet & Spicy Fresh Peach Salsa comes together in about 15 minutes or less with just 6 ingredients (plus salt & pepper). We recommend using pretty ripe peaches to impart the best peachy flavor and to balance out the heat from fresh jalapeños. Each batch yields about 6-10 servings, but we've definitely downed a batch in an evening with fewer folks at the table. This recipe is as scalable as you'd like, double or even triple it to feed a crowd.
 
We kept it simple and straightforward with the ingredients we had on hand, but you could also add fresh sweet corn or diced avocado to the mix.

Sweet & Spicy Fresh Peach Salsa

Active time: 10 minutes Fridge Time: 30+ minutes (optional) Yields: 6-10 servings as a side

1 quart Fresh Peaches

1 lb. Fresh Tomatoes (we used vine tomatoes, but Roma would work well, too)

2-3 Jalapeños (adjust for your heat preference, we like it a little spicier!)

2 small Limes

1 Red Onion

1 Bunch Cilantro

Sea Salt & Freshly Ground Pepper

Preparation

1. Wash all of your produce.

2. Prep your produce: Core & dice tomatoes, removing seeds and juice. Peel and dice onion. Remove ribs & seeds from jalapeños and finely dice. (Tip: we like to use a separate cutting board when working with hot peppers). Zest and quarter limes. Dice peaches. There's no need to remove the skin, the texture will disappear into the mix. Chop cilantro, stems and all.

3. Place tomatoes, onion, jalapeños, and peaches into a large serving dish. Season with salt and pepper to taste. Add lime zest and juice. Add cilantro. Stir with a large spoon to incorporate.

4. You can certainly enjoy the salsa straight away, but we like to let the flavors mingle in the refrigerator for about 30 minutes before serving.

6. Store any leftovers in a tightly sealed container for 3-5 days.
